Diabetic 10 Minute Szechuan Chicken image

Number Of Ingredients 10

4 chicken breast halves, 6 ounces, boneless and skinless
1 1/2 Tbsp vinegar
3 Tbsp cornstarch
1 tsp splenda
1 Tbsp vegetable oil
1/4 c water
3 minced garlic cloves
6 green onions, cut into 1 inch pieces
5 Tbsp soy sauce, light
1/8 tsp cayenne

Steps:

  • 1. Cut chicken into 1 1/2 inch cubes.
  • 2. Lightly toss with cornstarch in bag to coat.
  • 3. Heat oil in skillet or wok; stir-fry chicken and garlic until lightly browned.
  • 4. Add soy sauce, vinegar, splenda and water.
  • 5. Cover and cook 3 minutes or until chicken is cooked through.
  • 6. Add green onions and cayenne; cook uncovered about 2 minutes longer.
