Easy Southwestern Stroganoff (lighter recipe) image

Using fat-free sour cream cuts lots of fat-but none of the flavor-from this creamy flavor fiesta.

1 pound extra-lean ground beef
1 cup water
1 jar (16 ounces) Old El Paso™ Thick 'n Chunky salsa
2 cups uncooked wagon wheel pasta (4 ounces)
1/2 teaspoon salt
1/2 cup fat-free sour cream

Steps:

  • Cook beef in 10-inch nonstick skillet over medium-high heat about 6 minutes, stirring occasionally, until brown; drain.
  • Stir in water, salsa, pasta and salt. Heat to boiling; reduce heat to low. Cover and simmer about 15 minutes, stirring occasionally, until pasta is tender. Stir in sour cream; cook just until hot.
