Ginger Peanut Butter Dip image

Number Of Ingredients 10

2 teaspoons olive or vegetable oil
8 medium green onions, sliced ( 1/2 cup)
2 teaspoons finely chopped gingerroot
2 cloves garlic, finely chopped
1/2 cup peanut butter
1/2 cup chicken broth
1 tablespoon packed brown sugar
1/4 to 1/2 teaspoon ground red pepper (cayenne)
1 package (3 ounces) cream cheese, softened
Assorted raw vegetables and crackers, if desired

Steps:

  • Heat oil in 10-inch skillet over medium-high heat. Cook onions, gingerroot and garlic in oil about 2 minutes, stirring frequently, until tender.
  • Stir in remaining ingredients except vegetables. Cook about 2 minutes, stirring constantly, until hot.
  • Serve hot dip with vegetables.
