This is adapted from a similar recipe on Epicurious. I served it to a friend who is allergic to the original walnuts and DH doesn't like the original blue cheese. So here we go! Prep time included cooking the beets.

Number Of Ingredients 7

1 bunch medium size golden beets - about 1 1/4 lbs
1/2 c vinaigrette salad dressing (i used ken's greek)

Steps:

  • 1. Simmer beets until barely tender. Cool. Trim and remove skin. Cut into strips.

This salad was a bit too sweet for my taste. I think I'll try using less honey next time.

I'm not a huge fan of beets, but I really enjoyed this salad. The sweetness of the beets was perfectly balanced by the tanginess of the goat cheese.

This salad is a great way to use up leftover chicken or fish. I often add a grilled chicken breast or some flaked salmon to it.

I'm not a huge fan of goat cheese, so I substituted feta cheese instead. It was still delicious!

This salad is a great way to use up leftover beets. I always have a few beets leftover from juicing and this is a great way to use them up.

This salad was a hit at my last dinner party! The combination of sweet beets, tangy goat cheese, and crunchy walnuts was perfection. I'll definitely be making this again.
