GRILLED SALMON W/DIJON & ROSEMARY CRUST image

Number Of Ingredients 6

-1 lb of salmon fillet cut into two portions
-1 tbs of chopped fresh rosemary
-1 tbs of dijon mustard
-salt to taste, pepper to taste
-1.5-2 tbs of extra virgin olive oil
-1/2 tbs of fresh chopped garlic

Steps:

  • Mix the rosemary, mustard, salt, pepper, olive oil and garlic together in a bowl, the mixture should be pasty, not too loose and not too dry. Then let it sit for 5 minutes at room temperature. Spread on top of salmon fillets and let sit for 30-60 minutes in refrigerator to meld the flavors. After warming the grill, spray the grill w/non stick spray or brush with olive oil, the place fillets on grill and grill until the salmon is opaque and cooked through. Serve with mashed potatoes, roasted spinach or asparagus for a great meal.
