HEALTHY APPLE-WALNUT MUFFINS image

Yield 12 muffins

Number Of Ingredients 13

2 cups all purpose flour
1 teaspoon baking soda
¼ teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon allspice
¼ teaspoon nutmeg
¼ teaspoon salt
2 large eggs
1 cup plus 2 tablespoon frozen thawed apple juice concentrate
2/3 cup buttermilk
2 tablespoons rolled oats (don't use instant) or oat bran
2 small Granny Smith apples, peeled, cored, and chopped (into tiny pieces)
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 375 Line a muffin pan with paper muffin tins (then spray with PAM) Mix together flour, baking soda, cinnamon, ginger, allspice, nutmeg and salt Mix together eggs apple juice, and buttermilk Stir flour mixture and oat bran into egg mixture until ingredients are just moistened Gently stir in nuts and apples Spoon batter into muffin pans (fill on 2/3 way full) Bake for 20 minutes (or more but no less) Allow to cool on a wire rack
