1 1/3 cups chicken broth
1/2 cup sliced carrot
1/2 cup coconut milk
2 teaspoons cumin
1 teaspoon curry powder
1/2 teaspoon cinnamon
1/4 teaspoon red pepper
salt

Steps:

  • Toss chicken and cornstarch together. Brown chicken in skillet. Add remaining ingredients and simmer until carrots are tender. Serve over rice.
