Kagianas (Greek Eggs and Tomato) image

Also called strapatsada, this simple dish consists of just three ingredients: eggs, tomatoes, and olive oil. You'll be amazed, however, at the depth of flavor that is derived from such simplicity. Serve with crusty bread and feta for any meal of the day, or even as part of a meze spread. Enjoy hot or cold, though I must say I like this dish better the next day after leaving it in the fridge all night!

I followed the recipe exactly and my eggs turned out overcooked. I think it's important to keep an eye on them and adjust the cooking time accordingly.

This recipe was a bit bland for my taste. I think it would have been better with some added herbs or spices.

I'm not a huge fan of tomatoes, but I really enjoyed this dish. The eggs and cheese helped to balance out the tartness of the tomatoes. I'll definitely be making this again.
