I had a bunch of veggies in the fridge, so this is what I decided to make. I used purple carrots and golden beets. It turned out better than I expected.

Steps:
- 1. Peel and dice the beets. Grate the carrots. Stem and chop the kale. Cut the onion into slices, then in half.
- 2. Heat the oil (you can use any type you like). Once the oil is hot, add the onion and sauté for few minutes. Add everything else. Add salt and pepper to taste. Stir often until the vegetables are tender.
