Steps:
- Brown diced chuck steak in grapeseed oil a little at a time. Add beer to loosen the fond.
- Deseed and chop peppers into 1" squares and grind in food processor all the way to powder.
- Add jalapeno, garlic, cumin, oregano, cocoa powder corn flour and 3/4 C stock to food processor and mix well.
- Sweat onions in chili pot. Add meat, beer, sugar, salt and dried pepper paste, remaining stock and beans to the pot.
- To soak beans, cover with 2" of water, bring to a boil, turn off and soak for at least 60 minutes.
- Cook 2-3 hours at 300 in covered pot in oven.
