Lemon Souffle image

I've searched but cannot find a lemon souffle that does not have flour in it... like my mother's recipe so I am including it for that brave soul who would like to make a souffle. It sounds easy enough... enjoy!

Number Of Ingredients 4

4 egg yolks
1 c sugar
1 lemon (juice and grated rind)
4 egg whites beaten to stiff peaks

Steps:

  • 1. Beat egg yolks until thick and lemon colored
  • 2. Add sugar gradually and continue beating
  • 3. Add lemon rind and juice
  • 4. Fold in whites of egg beaten stiff
  • 5. Put into buttered baking dish and set in pan of hot water -- bake 40 minutes 350 oven
