Time 15m

Number Of Ingredients 8

4 red, yellow, green peppers
1 c salsa
1/2 c sour cream
1 c shredded cheddar jack cheese
1 tsp cumin
1 tsp chili pepper

1/2 tsp pepper

Steps:

  • 1. Take peppers and core them, cleaning them out. Then wash them and cut them into fourths length wise, making them like scoops.
  • 2. In a bowl, mix salsa and sour cream. Add spices. Mix in cheese. If mixture is too runny, you can add additional shredded cheese to thicken.
  • 3. Fill each pepper scoop with filling. Refrigerate util ready to serve. When placing on plate or tray, alternate pepper colors for a colorful addition to any veggie tray.

These peppers were a bit too greasy for my taste. I think I would have preferred them if I had baked them instead of frying them.

I'm not a big fan of peppers, but these were actually really good. The cheese and salsa helped to tone down the heat of the peppers.

These peppers were a bit too spicy for me, but my husband loved them. I'll definitely make them again, but I'll use a milder pepper next time.
