Marie's Yummy Apple Cake image

This started out to be a Betty Crocker recipe, but I have changed it so much that it now belongs to me. Thus the name change! You will love it! I think the combination of sour cream, spiced applesauce and the oil make this cake so moist and yummy! Useing two different type apples also contributes to the yummy taste. Your search...

2 c granulated sugar
2 tsp vanilla
3 medium eggs
3 c all-purpose flour
1 tsp salt
1 tsp baking soda
1/2 c oil
1/2 c sour cream
1/2 c spiced apple sauce
3 medium apples, granny smith/gala, peeled and cut medium fine. 2 1/2 cups
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 c chopped pecans or walnuts
1/2 c raisins
CARAMEL GLAZE
1/2 c salted butter
1/2 c light brown sugar
2 tsp half and half

Steps:

  • 1. Heat oven to 350 degrees.Grease and flour a 12 cup bundt pan or two large loaf pans.In large bowl, beat granulated sugar, oil, sour cream, apple sauce,vanilla and eggs with electric mixer on medium speed until light and fluffy. Beat in flour,salt, baking soda, cinnamon and nutmeg until smooth. Stir in apples, nuts and raisins (Optional of course).Pour into pan.
  • 2. Bake 60 to 90 minutes (depending on your oven)or until tooth pick inserted in cake comes out clean. Cool several minutes in pan. Remove from pan to cooling rack. In a two quart saucepan heat the glaze ingredients to boiling. Stirring occasionally. Boil two minutes, stirring constantly; remove from heat. Spoon glaze over warm cake.
  • 3. Note: Punch holes in top of cake before spreading glaze on top. I used homemade spiced applesauce, but you can use regular and add a little more cinnamon and nutmeg to the recipe.
