1 teaspoon whole cumin seed
1 tablespoon cracked coriander seed
1 tablespoon red pepper flakes
2 tablespoons mint, freshly chopped
1 lemon, zest of
1 lemon, juice of
1/2 teaspoon black peppercorns
1 lb east african variety olive

Steps:

  • combine everything in a glass jar.
  • add the olives and toss to coat.
  • refrigerate for 3 days.
  • lasts for 3 weeks in the refrigerator.
