Steps:
- Date filling - Combine in a saucepan the chopped dates, 1 TBSP brown sugar, and 1/2 cup water.
- Stir and bring to a boil and cook until dates are soft - about 5 minutes. The mixture should be like jam.
- Set aside to cool.
- Crumb mixture - combine the flour, the baking soda and the salt.
- Cut in margarine or butter.
- Then blend in the brown sugar and rolled oats.
- Press half of the crumb mixture on the bottom of a greased 8x8 or 9x9 pan. (If doubling the recipe, use a 9x13 pan.)
- Cover evenly with the cooled date filling.
- Cover with remaining crumb mixture, and pat until smooth.
- Bake at 325 degrees for 35 to 40 minutes or until golden brown. Don't let it get too dry!
- Cool before cutting. Grandma says that it is best to bake the day before using, cool and cover so that it is easier to cut, doesn't crumble and doesn't dry out.
