Microwave Nachos image

I made this for Super Bowl Sunday. It was super quick and no one could tell the difference between those that took longer in the oven. My new favorite way to make nachos. :)

1 bag(s) tortilla chips
1/2 c shredded cheddar cheese
1/2 c shredded pepper jack cheese
1 15-ozas can(s) refried beans
1 jar(s) sliced jalapenos, drained (as many as desired)
1 lb lean ground beef
1/4 c diced onion
1 pkg taco seasoning
1 pt sour cream

Steps:

  • 1. Prepare ground beef and taco seasoning according to package directions. Be sure to drain off as much grease as possible when browning the meat.
  • 2. Meanwhile, put tortilla chips on a large microwave-safe platter. Sprinkle with meat mixture. Dab on refried beans. Sprinkle on cheeses, onion, and jalapeƱos.
  • 3. Microwave at medium (50% power) about 2 minutes. Watch carefully. Microwave just until the cheeses loose shape and start to run together and nachos are steaming.
  • 4. Carefully remove from microwave. Let stand one minute and serve with sour cream or salsa on the side. Plate will be HOT!
