Steps:
- Wrap cinnamon sticks and ginger root in clean cloth.
- Pound with mallet or hammer until finely crumbled; discard stringy parts of ginger. Add to remaining ingredients and stir well.
- Store in airtight jars.
- Use for pickling tongue, cucumbers, etc.
