No Cheese - Yellow Squash Casserole by Sharon image

My mother gave me the cookbook that this recipe was in. It is called "How To Boil Water". It was published locally, in Louisville, Ky. in 1972. I married a year later. I guess she figured, I needed some help. Tweaked.

Number Of Ingredients 9

2 lb small yellow squash
1 c chopped onion
1/4 c light butter
1/4 c 2% milk
2 eggs
salt to taste
pepper to taste
1/2 c cracker crumbs
melted butter

Steps:

  • 1. Wash, don't peel squash. Cut into small pieces and cook, until tender in a small amount of salted water.
  • 2. Drain and pour squash into a buttered baking dish. Immediately add butter, salt, pepper, and onion.
  • 3. Combine milk, eggs and mix with the squash.
  • 4. Top with buttered cracker crumbs. Bake about 20 minutes or until golden brown in a 450 degree oven.
