Norwegian Parsley Potatoes image

I love to use parsley in many dishes, and it suits the fresh taste of small red potatoes well. Even though they're easy to prepare, they look fancy and go great with baked ham. -Eunice Stoen, Decorah, Iowa

Number Of Ingredients 4

2 pounds small red new potatoes
1/2 cup butter, cubed
1/4 cup chopped fresh parsley
1/4 teaspoon dried marjoram

Steps:

  • Cook potatoes in boiling salted water for 15 minutes or until tender. Cool slightly. With a sharp knife, remove one narrow strip of skin around the middle of each potato. In a large skillet, melt butter; add parsley and marjoram. Add the potatoes and stir gently until coated and heated through.

These potatoes were a bit too crispy for my taste. I think I would prefer them if they were cooked for a shorter amount of time.

I'm not a huge fan of parsley, but I decided to give these potatoes a try anyway. I'm glad I did! The parsley flavor was subtle and it didn't overpower the potatoes.

These potatoes were absolutely delicious! I followed the recipe exactly and they turned out perfectly. The potatoes were crispy on the outside and fluffy on the inside, and the parsley added a lovely flavor. I will definitely be making these again.
