Steps:
- Gently rub fuzz off peaches under running water and cut thinly sliced peaches in halves.
- Whisk together eggs, sugar and vanilla.
- Whisk in flour until smooth.
- Add cottage cheese and stir to combine.
- Heat 9 inch nonstick skillet over medium heat and add 1/2 teaspoon of butter to skillet.
- Spoon 1/3 cup of pancake batter into melted butter and swirl for very thin pancakes.
- Cook until batter firms, flip over, and cook until firm (approx. 1 minute).
- Transfer to baking sheet and keep warm in 200 degree oven.
- Serve with peaches and whipped cream.
