Yield 2 People

Number Of Ingredients 12

2 lb Boneless skinless chicken breast
1 cup white rice
1-2 cups baby spinich
salt
pepper
garlic powder
oinion powder
curry powder
paprika
chilli pepper
sprinkling of shredded cheese
salsa

Steps:

  • The rice: cook the rice according to package instructions or in a rice cooker. The chicken: sauté the defrosted chicken breast in a little bit of olive oil. Season to taste with the salt, pepper, garlic powder, oinion powder, curry powder, chili powder, and paprika. While the chicken and rice are cooking put a handful of baby spinich on each plate. When the chicken is cooked take it out of the pan and set it aside. Put the cooked rice in the chicken pan and sauté briefly to allow the rice to season. Take the seasoned rice and put it on top of the baby spinich. Now put the chicken back in the pan and sauté briefly with the salsa. Lastly, place the chicken on top of the rice and sprinkle the cheese over the top of each plate.

I'm not sure what I did wrong, but my sauce turned out bland. I'm going to try it again and see if I can get it right.

This dish is a bit time-consuming to make, but it's worth the effort. The chicken is fall-off-the-bone tender and the sauce is flavorful and complex.
