PIGS IN THE BLANKET/CABBAGE ROLLS image

Number Of Ingredients 13

1 large cabbage
l lb pork and veal mixed
1/2 C rice uncooked - soaked in
water
1 med. onion, finely diced and
sauted in butter
2 minced garlic cloves
2 eggs
freshly grd blk pepper
1 green pepper
tomato juice
1 C sour cream
1 Tbls flour

Steps:

  • Preheat oven to 300. Parboil cabbage for 35 minutes. Drain and removed outer leaves. Carefully remove inner leaves. Spread leaves with meat mixture. Fold sides and roll. Stack cabbage rolls in a casserole. Chop leftover cabbage and 1 green pepper. Sprinkle into casserole. Cover with tomato juice and outside cabbage leaves. Bake for at least two hours. 45 minutes before serving remove from oven and drain liquid into a bowl. Add sour cream and flour, pour over cabbage rolls and return to oven for a minimum of 45 minutes.
