Number Of Ingredients 5

12 whole new potatoes (or other small round potatoes)
3 tablespoons olive oil
kosher salt to taste
black pepper to taste
rosemary (or other herbs of choice) to taste

Steps:

  • Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender. 2On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato. 3With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil. 4Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.) 5Bake in a 450 degree oven for 20-25 minutes until golden brown.  See Recipe Card About this Recipe Course/Dish: Potatoes Main Ingredient: Potatoes Regional Style: American Dietary Needs: Vegetarian Hashtags: #red, #baked, #olive, #oil, #Fried, #oven

These potatoes are a great way to use up leftover mashed potatoes. They're also a great way to get your kids to eat their vegetables.

These potatoes were a complete disaster. They were burnt on the outside and raw on the inside.

I'm not sure what I did wrong, but my potatoes didn't turn out crispy at all. They were more like mush.

Overall, I thought these potatoes were just okay. They weren't bad, but they weren't anything special either.

The potatoes were a little undercooked for my liking. I'll definitely cook them for a few minutes longer next time.

These potatoes were a bit too oily for my taste. I think I'll try them again with less oil next time.
