A skillet dish with chicken, rice and coconut. The original calls for boneless chicken breast, but I prefer chicken thighs.

The chicken was a bit dry, but the sauce was delicious. I would recommend marinating the chicken for longer next time to help keep it moist.

This recipe was a bit too sweet for my taste, but it was still good. The chicken was cooked perfectly and the sauce was flavorful. I would recommend reducing the amount of sugar in the sauce if you don't like your food too sweet.
