Polynesian Curry image

My mom used to make this delicious Polynesian recipe when I was a kid. I just love the different toppings you can add to this basic coconut curry base. You can make it as spicy or as sweet as you want.

I would have liked the recipe to include more vegetables. I added some chopped carrots and bell peppers to mine.

This curry is the perfect amount of spicy. It has a nice kick, but it's not too overpowering.

I followed the recipe exactly, but my curry turned out a little bland. I think I'll add some extra curry paste next time.
