Yield 4 servings

Number Of Ingredients 13

1 tablespoon olive oil
8 boneless pork loin chops
Salt
Freshly ground black pepper
1 tablespoon dried thyme
1 tablespoon dried tarragon
1/2 cup dry Champagne
1 cup milk
1 tablespoon all-purpose flour
1/2 cup sliced black olives
1 loaf raisin bread, sliced crosswise into 1/2-inch thick slices and toasted
4 to 6 ounces mascarpone cheese
2 pears, cored and thinly sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Season both sides of pork with salt, black pepper, thyme and tarragon. Add chops to hot skillet and cook 2 minutes per side, until golden brown. Add Champagne and cook 1 minute.
  • Remove 4 chops from skillet and set aside.
  • Whisk together milk and flour until flour dissolves. Add milk mixture to skillet and bring to a simmer. Simmer 3 minutes, until sauce thickens and chops are cooked through.

I followed the recipe exactly and my pork chops were tough. I think I might have overcooked them.

I'm not sure what I did wrong, but my sauce didn't turn out creamy. It was more like a thin gravy.

I'm not a big fan of pears, but I loved them in this dish. They added a nice sweetness to the sauce.

The raisin bread was a nice touch, but I think it would be even better with a crusty baguette.

This dish was a bit too rich for my taste, but my husband loved it. I think it would be better with a lighter sauce.

The pork chops were a bit dry, but the sauce was delicious. I'll try brining the chops next time to see if that helps.

This dish was a hit with my family! The pork chops were juicy and tender, and the creamy champagne sauce was divine. The raisin bread with mascarpone and pears was the perfect accompaniment.
