Potato Baskets with Mushroom& Thyme Filling image

Great potato recipe for yal veggies and veggie-wanna-be (like myself). I made this for my brother who rarely eats anything without red meat. He later asked me for the recipe. Serve this a red beet salad, and you've got yourself a healthy and hearty meal.

I've tried this recipe several times and I can never seem to get the potato baskets to hold their shape. I'm not sure what I'm doing wrong.

I'm not sure how I feel about the thyme in the filling. I think I would have preferred something else, like rosemary or sage.

I had a hard time getting the potato baskets to hold their shape. Maybe I didn't press them into the muffin tins hard enough.

The potato baskets were a bit too oily for my taste. I think I'll try baking them next time instead of frying them.

I added some crumbled bacon to the filling and it was amazing! This is definitely a recipe I'll be making again.
