Prawn and Ginger Fritters image

2 1/2 cups breadcrumbs, coarsely chopped
1/2 cup coconut milk
500 g raw prawns
2 tablespoons fresh ginger, finely chopped
1/2 cup coriander leaves, chopped
1 egg
1 tablespoon fish sauce
vegetable oil (for deep frying)
1/2 cup sweet chili sauce

Steps:

  • Soak the breadcrumbs in coconut milk.
  • Pulse the prawn meat in a food processor with the ginger, coriander leaves, egg and fish sauce.
  • Add the soaked breadcrumbs and pulse until just blended. Do not overwork the mixture.
  • Heat the oil to 180C and drop teaspoonfuls of the mixture into the oil.
  • Turn and cook until golden brown, about 2-3 minutes.
  • Drain and serve with sweet chilli sauce.

I'm not a big fan of seafood, but I thought these fritters were pretty good. The ginger flavor was really nice. I would definitely make them again, but maybe with chicken or tofu instead of prawns.

These fritters were delicious! I loved the combination of prawn and ginger. The dipping sauce was also very good.

The fritters were easy to make and cooked up quickly. The flavor was good, but I found them to be a bit too oily. I think I would try using less oil next time.
