This recipe is a great way to meal prep for the week. I made a big batch on Sunday, and I've been eating it for lunch all week. It's still delicious, even after a few days.

I'm a vegetarian, so I used tofu instead of chicken in this recipe. It turned out great! The tofu was crispy on the outside and tender on the inside.
