Rainbow Vegetable Pizza image

This is an alternative to high-fat pizza.

1 flat bread pizza crust (such as Flatout® Flatbread Thin Crust Flatbread)
¼ cup crushed tomatoes with roasted garlic and olive oil (such as Furmano's®)
¼ cup chopped fresh spinach
¼ cup fresh chopped broccoli
¼ cup finely chopped yellow bell pepper
¼ cup finely chopped orange bell pepper
¼ cup chopped eggplant
9 slices pepperoni, chopped
¼ teaspoon dried oregano
¾ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pizza crust on a baking sheet and spread tomatoes onto crust. Layer spinach, broccoli, yellow bell pepper, orange bell pepper, eggplant, pepperoni, and oregano onto crust; top with mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, 7 to 10 minutes.
