RED, WHITE & BLUE MASHED POTATOES image

Number Of Ingredients 7

2 lbs red new potatoes, quartered
2 cloves garlic, minced
6 strips of bacon
1/4 lb. Gorgonzola cheese, room tempurature
1/4 cup heavy cream, room temperature
1 tbl butter, room temperature
Salt & pepper

Steps:

  • 1. Add potatoes & garlic to a medium pot & fill with enough cold water to cover the potatoes by an inch. Season with salt & bring water to a boil. Reduce to a simmer & cook until potatoes are soft, about 15 minutes. 2. Meanwhile, fry bacon in a skillet until crisp. Set aside on paper towels to drain. Roughly chop bacon & reserve. 3. Drain potatoes & garlic & place back in the pot with the cheese, heavy cream, butter & chopped bacon. Roughly mash, adding more cream if needed. Season with salt & pepper to taste.
