Rice and Peas image

1 1/2 cups coconut milk
2 1/2 cups water
1 stalk scallion
1 small onion
2 sprigs thyme
1/8 teaspoon salt
2 cups rice
2 cups red kidney beans
1 small scotch bonnet pepper

Steps:

  • In a pot, combine coconut milk, water and seasonings, bring to boil.
  • Add rice, red kidney beans, salt and stir.
  • Add scotch bonnet pepper.
  • Cover and reduce heat, allow to simmer until grains are soft.

This recipe is a bit spicy for my taste. I would recommend using less cayenne pepper.
