2 lbs hamburger
1 chopped onion
1 chopped green pepper
1 (28 ounce) can chili beans (without meat)
1 (28 ounce) can stewed tomatoes
salt and pepper
1 garlic clove, minced (or to taste)
1 teaspoon cumin
1 teaspoon extra hot chili powder (or to taste)
12 corn tortillas
1 1/2 cups grated cheddar cheese

Steps:

  • Brown hamburger, adding 1 cup chopped onion, and 1 cup chopped green pepper as the meat browns. Add 1 large can chili beans (without meat), 1 large can stewed tomatoes and season to taste with salt, pepper, garlic, cumin, and extra hot chili powder, if desired. Layer meat and bean mixture in casserole with 1 package of corn tortillas. Top with grated cheese. Bake in 350* oven for 20-30 minutes. Variations: Add canned or left over corn, chopped olives to make it a mock tamale pie.
