Number Of Ingredients 15

3 pounds round roast of beef
2 cups dry red wine
2 to 3 tablespoons red wine vinegar
3 tablespoons brown sugar
1/4 cup tomato puree
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
2 teaspoons dry mustard
2 teaspoons soy sauce
1 teaspoon ground cloves
8 crushed gingersnaps
2 cups beef broth
2 onions, thinly sliced

Steps:

  • Combine all ingredients except beef to form marinade. Marinate beef for two to three days.
  • Cook meat in marinade on top of stove over low heat in heavy covered pot, about two to two-and-a-half hours or until tender.
