This is inspired by another recipe from a recipe book put out by Costco®. I'm trying to cut down on carbs and this seemed like a yummy way to do so!

Steps:
- 1. Heat oil in wok over high heat. Add chicken and stir-fry until they begin to get brown.
- 2. Reduce heat to medium. Add soy sauce, mirin, garlic and ginger. Stir-fry until most of liquid is gone.
- 3. Add green onions and sesame seeds. Sauté until chicken is done.
- 4. Arrange melon on 4-6 plates and top with chicken.
