This stew is a great way to warm up on a cold day. The beef is tender and flavorful, and the barley and vegetables add a nice heartiness to the dish. I especially like that this stew can be made in a slow cooker, so I can just set it and forget it.

This stew was easy to make and very flavorful. I used chuck roast and it was fall apart tender after cooking it on low for 8 hours. I served it over mashed potatoes and it was a hit with my family.
