This was a great way to use up some leftover corn and tomatoes. I added some chopped onion and green pepper, and it was delicious.

I'm not a huge fan of lima beans, but this recipe was so good that I didn't even notice them. The corn and tomatoes were perfectly cooked, and the bacon added a nice smoky flavor.

This succotash recipe is a great way to use up fresh summer produce. It's easy to make and can be tailored to your own taste preferences. I added some chopped bacon and jalapeño to mine for a little extra flavor.
