1 egg, lightly beaten
1 tomatoes

Steps:

  • Mix creamed corn, egg and coconut.
  • Spoon into ovenproof dish and top with sliced tomato.
  • Heat through for about 20 minutes--should be bubbling when you retrieve it from the oven.
