Yield 8 people

Number Of Ingredients 15

2 tbsp. vegetable oil, divided
1 lb. pork loin, cubed
1 large onion, diced
3 cloves garlic
4 tbsp. all purpose or GF flour
4 cups sodium-reduced chicken broth
1 cup dry white wine
2 large carrots, peeled and diced
1 medium turnip, peeled and cubed
1 large parsnip, peeled and sliced
1 tsp. dried thyme leaves
1 tsp. freshly ground pepper
1/2 tsp salt
1 bay leaf
a splash for 2 of tabasco sauce

Steps:

  • In a large stew pot, heat 1 tbsp oil over medium-high. Add pork and brown on both sides. Remove from pot and set aside. Add remaining 1 tbsp oil, onions and garlic to pot, and sauté for about 5 minutes. Remove from pan and set aside. Add flour to stew pot and whisk for about 5 minutes until flour is golden in colour, watching carefully that it does not burn. Slowly pour chicken broth and wine into the flour. Return pork, onions, garlic and all remaining ingredients to the pot. Bring to a boil. Cover, reduce heat and allow to simmer for at least 1 hour or until pork and vegetables are tender.

I wasn't impressed with this stew. The pork was tough and the vegetables were overcooked. I won't be making this again.

This stew was a bit bland for my taste. I added some extra spices and it was much better. Next time, I'll also brown the pork before adding it to the stew.
