Texas Rattlesnake Bites image

Recipe straight from Texas Road house!

Number Of Ingredients 6

1 cup chopped jalapenos
1 cup red bell peppers
4 cups monterey jack cheese, shredded
1 1/2 cup bread crumbs, seasoned or unseasoned
1 1/2 cups buttermilk
vegetable oil

Steps:

  • 1. Preparation: In a shallow bowl, mix cheese, jalapenos and peppers.
  • 2. Roll into a firm ball, place in covered bowl and let set over night in the refrigerator.
  • 3. The next day roll into one ounce balls,dip in buttermilk , then dip balls in breadcrumbs. Deep fry in hot oil until golden brown.
  • 4. Serve immediately with Ranch Dressing or Cajun Horseradish Sauce!

I've made this recipe several times and it always turns out great. The key is to use fresh rattlesnake meat and to cook it slowly over low heat. I usually serve it with rice and beans.
