Tortellini Soup image

It's a wonderful comfort food. Friends and family always rave about this soup and want the recipe. Tastes even better after warming up the leftovers. This is a family favorite I got from my Mother-in-law. I use the dry packaged tortellini. If you're a garlic lover, don't be afraid to add more. If you're a spinach lover add more to the leftovers when warming over. When serving the soup sprinkle desired amount of parmesean cheese on top of individual portion and stir in.

I followed the recipe exactly, but the tortellini didn't cook evenly. Some were still hard, while others were overcooked. I'll have to adjust the cooking time next time.

The soup was a bit bland for my taste. I would've preferred a more robust broth. Other than that, it was a good recipe.

I tried this recipe with a few substitutions, and it turned out fantastic. I used chicken broth instead of vegetable broth and added some spinach and mushrooms. Delicious!

The recipe was easy to follow, but the soup lacked a bit of flavor. I added some extra herbs and spices, and it turned out much better.
