I found this recipe on the large container of Dannon Light and Fit Yogurt. Since it is my favorite yogurt it looked like a good thing to try.

Time 30m

Yield 8 serving(s)

Number Of Ingredients 6

1 cup miniature marshmallow
1 (20 ounce) can pineapple chunks
1 banana
1 (11 ounce) mandarin orange segments
3/4 cup yogurt
1/4 cup coconut flakes

Steps:

  • Drain pineapple and put in a bowl. Slice Banana and put in bowl with pineapple. Drain Mandarin oranges and place in bowl, also. Add yogurt, either vanilla or strawberry. I used Dannon Light & fit Refrigerate for at least 15 minutes. Toast coconut and stir into just before serving.

I love the creamy yogurt dressing in this salad. It's a great way to use up leftover yogurt, and it's also a nice change from the traditional mayonnaise-based dressing.

I've never been a big fan of ambrosia salad, but this yogurt version is actually really good. The yogurt dressing is a nice tangy contrast to the sweet fruit.
