4 cups fresh green beans
6 ounces feta cheese
2 plum tomatoes
6 green onions
3 tablespoons olive oil
1 tablespoon lemon juice
salt and pepper, to taste

Steps:

  • 1. Slice beans into bite-size pieces.
  • 2. Microwave 6 minutes (or until cooked).
  • 3. Chop tomatoes.
  • 4. Dice onions.
  • 4. Crumble cheese and mix with oil and lemon juice.
  • 5. Toss all ingredients together.
  • 6. Salt and pepper to taste.
