Almond Joy Bread image

I came up with this recipe while trying to use up buttermilk which I don't usually keep on hand...but with the way my family loved this bread, buttermilk may become a pantry staple! Its a dense, sweet bread perfect for holiday gatherings and get togethers. I hope you enjoy it.

2 c sugar
3/4 c vegetable oil
4 eggs
1 1/2 tsp coconut extract
1/2 tsp almond extract
3 c flour
1 tsp non-aluminum baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c buttermilk
1 1/2 c sweetened coconut
1 c chopped almonds
1 c chocolate chips

Steps:

  • 1. In the bowl of your mixer, blend the sugar, oil, eggs and extracts.
  • 2. In a separate bowl, combine the flour, baking powder, baking soda and salt: add to the sugar mixture, alternating with the buttermilk till just moistened.
  • 3. Fold in coconut, chocolate chips, and almonds.
  • 4. Pour into 2 greased loaf pans and bake at 325 for 60-65 minutes. Done when toothpick comes out clean. Cool for 10 minutes in pans before removing, then cool on wire racks.
  • 5. Yields: 2 loaves
