Steps:
- 1. Heat oven to 350 degrees F. Coat a large baking dish with no-stick spray. Set aside.
- 2. In a large bowl, combine the lima beans, ham (or bacon), onion, garlic, ketchup, barbeque sauce, corn syrup, brown sugar, mustard, liquid smoke and ham flavoring (I use Goya ham concentrate - pictured). Transfer to the prepared baking dish.
- 3. Bake for 45-50 minutes or until hot and bubbly. During this step you may have to add some of the reserved cooking liquid so beans don't dry out.
- 4. HINT: dried lima beans must be washed and soaked overnight then drain soaking liquid. Add about 5-6 cups fresh water and cook for approximately 2 hours or until beans are soft, adding water as needed. Refer to instructions on bean packaging for further details. Please note: COOK TIME listed includes the 2 hour stove top cooking, prep time and baking time
- 5. For extra flavor, lay slices of bacon on top of beans when ready to bake.
