12 ounces angel hair pasta, cooked
2 boneless skinless chicken breasts, cut into strips
2 tablespoons olive oil, divided
1 1/2 cups baby carrots
1 1/2 cups broccoli
2 garlic cloves, minced
1/2 teaspoon parsley
2/3 cup chicken broth

Steps:

  • Cook chicken in 1 Tbsp oil, drain on paper towels.
  • Heat remaining oil in same pan, cook carrots 4 minutes.
  • Add broccoli & garlic, cook 2 minutes.
  • Add broth & parsley.
  • Reduce heat & simmer 4 minutes.
  • Toss with Angel Hair.
