Apple Matchstick Salad image

2 tablespoons olive oil
2 teaspoons fresh lemon juice
1/8 teaspoon salt
4 medium apples, julienned
3/4 cup chopped pecans, toasted
1/2 cup fresh cilantro leaves
1/4 cup dried cranberries
1/4 cup golden raisins

Steps:

  • In a large bowl, whisk together olive oil, lemon juice and salt. Stir in remaining ingredients.
