Steps:
- preheat oven to 350F
- Combine flour, baking soda, salt, spices. Set aside.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time beating well after each addition.
- Beat in lemon rind.
- add half of flour mix, combining. the half of applesauce. Repeat until combined.
- Stir in raisins and diced apple.
- Pour into well greased 9 x 5 inch pan. Bake 1 hour and 5 minutes. Cool 10 min before turning out.
- Combine rum, water and raisins in a pot. Simmer over med heat gentle about 5 min.
- Applesauce: 4 apples, unpeeled, quartered and cored. 1/2 cup water. 1/4 cup sugar.
