Applesauce Raisin Cookies/Diabetic Friendly image

A friend gave this recipe to me shortly after I was diagnosed with diabetes. She knew I loved anything with apples.

Number Of Ingredients 13

1/4 c vegetable oil
1/4 c sugar
1 egg
1 tsp vanilla
1/2 c unsweetened applesauce
1/2 c whole wheat flour
1/2 c unbleached flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp cloves
1/2 c rolled oats
1/2 c raisins - dark or golden

Steps:

  • 1. Cream the oil and sugar together. Then add the egg and beat until light.
  • 2. Next blend in the vanilla and applesauce
  • 3. Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well.
  • 4. Drop cookies onto a lightly oiled baking sheet using a teaspoon. Bake for 10 minutes at 375 degrees. Let cool on a wire rack before serving.
