Asparagus-Ham Custard image

I love asparagus, and this is one great way to use it. It combined with the ham, and the accent of the mustard in the recipe made it a hit with my family.

Number Of Ingredients 8

1 lb asparagus, cut in one inch pieces
6 large eggs
3/4 c milk
2 Tbsp prepared mustard
1 tsp dry mustard
1/4 c chopped onion
2 c diced cooked ham
2 c grated swiss cheese

Steps:

  • 1. Preheat oven to 400 degrees Steam asparagus pieces until just tender crisp. Drain and set aside. (Drained canned asparagus can be substituted for fresh)
  • 2. Beat eggs until light in color. Add milk. Blend in mustards, mixing well
  • 3. Stir in onion, ham and cheese until well combined. Gently fold in asparagus
  • 4. Pour mixture into a greased 8 inch square baking dish. Garnish with 5 asparagus tips and sprinkling of ham in the center
  • 5. Bake for 30-35 mins or until knife inserted in center comes clean
